Vegan Recipes from the Heart: Pie Crust (for a one-crust pie)

1 c Flour
½ t Salt
1/3 c + 1 Vegan Margarine
2 T Ice Water

Sift flour and salt into a bowl. Cut in Vegan margarine with a pastry blender until pieces are the size of peas. Sprinkle in ice water a little at a time, mixing with a fork. Form dough into a ball with your hands. Avoid over handling to keep dough cold to make the piecrust flaky. Flatten ball of dough onto a floured dishtowel. Roll with a floured rolling pin until less than ¼" thick. Keep turning the direction you roll to help shape a circle. Roll until 1" larger all around than your pie pan. If the dough breaks, stick it back together by pressing firmly.

Place the pie pan upside down on the dough. Carefully lift the edges of the dish towel while holding the pie pan and quickly turn upside down so that pie pan is right side up. Ease the dough into the pie pan.
