Edy
Henderson loves cooking, especially preparing holiday feasts for her family
and friends. She has researched nutrition and individual food sensitivites
and their affect upon health. She has learned to adapt recipes to the
special dietary needs of her family. Her daughter is vegan, her grandchild
has a severe nut allergy, and she herself has been a vegetarian for many
years. She loves sharing good food with friends and family and incorporating
their feedback into her original recipes.
She enjoys traveing and experiencing tastes from
other cultures, and has incorporated dishes from many places that she
has visited into her collection of recipes: tastes from Latin America,
Asia, and the Mediterranean countries of Europe.
Edy's own path to becomming vegetarian resulted
from her personal battle with cancer, prompting her to research healthy
life styles. After learning that the American Cancer Society and the American
Heart Association both recommend large amounts of fruits and vegetables
as part of a low fat diet, she tried increasing fruit and vegetables and
eliminating meat. This diet helped her to feel better and to keep healthy,
so has stuck with a vegetarian diet.
Edy developed design and photography experience
while working at DesignElevations.com
on fashion shoots, and now does her own photography to accompany her articles
and books.
Edy plays tennis several times a week, and volunteers
for the American Cancer Society and the Actor's
Theatre of Santa Cruz. She and her husband grow many of their own
fruits and vegetables in their backyard organic gardener. She is a retired
software engineering manager (AOL, Sun Microsystems, Schlumberger, NASA),
a violinist, and a published writer* on food and travel. Edy lives in
Aptos, CA with her husband, two dogs and a cat..
